Cascabel: Cascabel chiles are small round chile peppers which grow native along the Pacific coast of Mexico. Cascabel chiles can also be called chile bola, bola
chile, rattle chile or coba. They are a small, round, medium hot chiles in the family Capsicum annuum. The name Cascabel comes from the Spanish word for "rattle", the
dried chiles make a rattling sound when shaken and can be used for music. Cascabels are small chiles, usually about 1 inch in diameter, are plum shaped and have a nutty,
smokey flavor. They are green when immature, and become a dark red/brown color when ripe or dried.
Cascabel are available whole, dried, ground, powdered or as a paste. They are popular in soups, salsas, sauces and stews. Their warm, nutty, slightly bitter flavor works
well in most Mexican dishes. Medium hot, cascabel run between 1,250-2,500 Scoville units or a 4 on a heat index scale of 10. You can substitute cascabels for other chiles
like guajillo chile, pequin pepper, tepin pepper, or cayenne pepper, but you will need to account for the different heat index of each. Cascabels can also be toasted,
releasing a tantalizing aroma. Toasted cascabels can be used in most dishes, or made into a smokey, spicy sauce.
